The Peperoni ripieni recipe is a delightful Italian dish that features stuffed bell peppers. The bell peppers are filled with a mixture of seasoned meat, breadcrumbs, Parmesan cheese, and herbs, then baked until tender and golden. Ingredients

4  capsicum, two red and two yellow
400 g brown and white mushrooms
3 clove(s) garlic
1 bunch(es) fresh parsley, chopped
100 g frozen peas
2  spring onion, chopped
salt and pepper
rosemary
paprika powder
dried chili flakes
100 g sour cream
100 ml water
oil for frying

Instructions

Leave the stems on the capsicum but cut it short, so the capsicum can stand upright. Cut off the tops, remove the seeds and the white skins inside. Place them upright in a greased ovenproof dish.

Crush the garlic and fry in a little oil. Wash and slice the mushrooms and add them to the garlic. Fry for 5 minutes then add the peas, the parsley and spring onions. Cook for 5 more minutes and season to taste with salt, pepper, chili flakes, rosemary and paprika powder. Fill the mixture into the capsicums. Mix the sour cream with the water and season to taste. Pour the cream mixture into the capsicums.

Bake in the oven at 180°C for 40 minutes.
