Pear and blackberry cake recipe details
Ingredients
For the dough: | |
100 g | butter |
125 g | sugar |
1 tsp | vanilla extract, 1-2 tsp |
2 | eggs |
150 g | curd cheese |
3 tbsp | milk |
250 g | flour |
3 tsp | baking powder |
For the topping: | |
1 kg | ripe pears |
250 g | fresh blackberries |
For the glaze: | |
150 g | sour cream |
150 g | yoghurt |
3 | eggs |
75 g | sugar |
1 tsp | vanilla extract, 1-2 tsp |
2 tbsp | lemon juice |
½ | lemon, grated rind |
Instructions
For the dough:Beat the butter until soft and creamy. Trickle in the sugar and add the vanilla extract. Stir in the eggs, one at a time. Add the milk and the curd cheese. Combine the flour and baking powder and sieve into the bowl and mix until the dough is well combined and smooth. Spread the dough in a high rimmed baking tray and flatten.
Preheat the oven to 180°C.
For the topping:
Peel, core and quarter the pears and cut into slices. Evenly divide the blackberries and the pears on the dough. Transfer the baking tray into the oven and bake for approximately 20 minutes.
For the glaze:
Mix the sour cream, yoghurt, eggs, sugar, vanilla extract, lemon juice and lemon rind until smooth. Take the cake out of the oven and divide the mixture on top, then bake at the same temperature for approximately 25 more minutes.
