Peaches in brandy recipe details
Ingredients
4 large | peaches, just ripe |
150 ml | brandy |
4 tbsp | water |
100 g | caster sugar |
Instructions
Heat oven to Gas Mark 9, 250°C, 500°F.Boil some water and place in a deep heatproof bowl. Lightly score the skin of the peach with the point of a sharp knife from the stalk end down and carefully lower into hot water. Allow to soak for about 45 seconds or until the skin starts to curl. Remove from water using slotted spoon and drain excess water. Allow peach to cool slightly and is comfortable to handle. Remove skin with sharp paring knife and remove stalk if any. Set aside. Repeat for remaining peaches.
Arrange peaches in a stainless steel saucepan with a metal handle (probably not non-stick unless guaranteed for that temperature) or a frying pan will work well. Do not use any pan with a plastic or composite handle as they may melt or burn. Pour in brandy and water and add sugar. Poach for 10 minutes.
Remove pan from oven using good quality oven gloves – the handle will be extremely hot. Place on trivet or on heatproof mat etc.
Remove peaches with slotted spoon, drain briefly and set aside. Allow to cool.
Put pan on top of hob and reduce until syrupy, probably 1-2 minutes. Allow to cool.
Serve warm, in a glass sorbet or ice cream bowl. Make for two if to be served for that special evening. Do not serve to children or young teenagers due to use of brandy!
