Peach and spice muffins details
- Ingredients
- 2-1/4 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup rich milk or half-and-half
- 1/2 cup vegetable oil
- 2 eggs
- 1 teaspoon vanilla
- 1-1/2 cup diced fresh or frozen peaches (do not thaw if frozen)
Stir together the dry ingredients and add the peaches. Stir to coat peaches with flour mixture. (This will keep the fruit from sinking to the bottom.) Beat the wet ingredients and stir into dry ingredients. Stir as little as possible. Do not beat. Spoon into 12 greased muffin cups and sprinkle with sugar. Bake for approximately 30 minutes in a 350-degree F oven. If you are using frozen peaches, add a few extra minutes baking time. Let sit about 5 minutes before removing from muffin tins.
Note:This same recipe is great using strawberries, blueberries, or blackberries. You may or may not want to omit the cinnamon and/or nutmeg.
