Peach and grape parfait recipe details
Ingredients
120 ml | double cream |
125 g | ricotta cheese |
125 g | mascarpone cheese |
icing sugar, to taste | |
½ tsp | vanilla extract |
3 medium | peaches, stoned and skinned, sliced or use canned peach slices, drained |
10 | sweet white (green) grapes, washed, drained and vertically halved |
10 | sweet red or black grapes, washed, drained and vertically halved |
meringue, crushed, to decorate |
Instructions
Place cream and cheeses in a bowl and whisk until smooth and well blended. Whisk in vanilla and add sugar to taste and whisk again. Divide between 4 cocktail or ice cream glasses, or dessert bowls.Divide the peach slices between the glasses and add a few each of the halved grapes. Sprinkle with a little crushed meringue. Chill for at least 30-40 minutes before serving.
Option: replace grapes with fresh pitted cherries; if using sour cherries, a little more icing sugar may be required.
