Pasta with tomato sauce and herb oil recipe details
Ingredients
100 g | bacon, diced |
1 | onion, chopped |
1 sprig(s) | oregano, chopped |
1 sprig(s) | parsley, chopped |
¼ | lemon, grated peel |
100 g | freshly grated Parmesan cheese |
3 clove(s) | garlic, minced |
1 can(s) | tomatoes |
salt and freshly ground black pepper | |

400 g | pasta |
5 tbsp | olive oil |
Instructions
In a saucepan, fry the bacon over medium heat until golden and crispy. Remove from the pan and set aside. Sauté the onion until soft. Add the garlic and the tomatoes and bring to a boil. Season to taste with salt, pepper and sugar. Simmer for 15 minutes.Mix the oregano, parsley and lemon zest with the oil. Season to taste with salt and pepper.
Cook the pasta in salted water until al dente. With a hand blender, purée the tomato sauce. Stir in the bacon. Add the drained pasta and toss.
Divide onto warmed plates, drizzle over some of the herb oil and serve with the Parmesan cheese.
