Ingredients

1  onion, chopped
300 g celery, diced
1  red chili pepper, chopped
300 g tofu, crumbled
2 tbsp oil
salt and freshly ground black pepper
2 tbsp soy sauce
2 tbsp tomato puree
150 ml vegetable stock
4 sprig(s) cilantro, chopped
10 g fresh ginger, grated
1 can(s) tomatoes
3 tbsp sweet chili sauce
400 g pasta

Instructions

In a saucepan, heat the oil. Sauté the celery for 4 minutes. Season with salt and pepper. Remove from the pan and set aside. Add the tofu into the pan and fry, stirring, for 4-5 minutes. Add the onion, chili, soy sauce and tomato purée and cook for 2-3 more minutes.

Cook the pasta in salted water until al dente.

Pour the stock into the pan and bring the sauce to a boil. Reduce the heat and stir in the tomatoes and the ginger. Cook for 4-5 minutes. Add the celery and the cilantro and season to taste with salt, pepper and sweet chili sauce.

Drain the pasta, add to the sauce and toss. Serve immediately.
