Pasta with Goat s Cheese Sauce and Courgette recipe

|500 g||courgette, sliced|
|150 g||goat’s cheese|
|1 clove(s)||garlic, minced|
|salt and freshly ground black pepper|
|400 ml||vegetable stock|
Cook the pasta in salted water until al dente.
In a saucepan, melt the butter. Stir in the flour and cook stirring for 1-2 minutes. Whisk in the stock, bring to a boil and simmer for 5 minutes. Add the cheese and stir until melted. Season to taste with salt and pepper. Keep the sauce warm.
In a pan, heat the oil. Fry the courgettes for 2 minutes. Add the garlic and stir-fry for 3-4 minutes. Season to taste with salt and pepper.
Drain the pasta, transfer into a bowl and add the sauce. Toss. Serve with the courgettes.
