Goan style lamb curry recipe details
Ingredients
4 tbsp | oil |
2 medium | onions, finely chopped |
4 clove(s) | garlic, crushed |
1 piece(s) | fresh root ginger, 2,5cm, finely chopped or grated |
2 large | fresh red chilies, seeded and quartered lengthwise |
750 g | lamb fillet, cut into bite-size pieces |
1 tsp | salt |
75 ml | malt vinegar |
150 ml | water |
2 | fresh green cilies, seeded and cut into rings, for garnish |
For the spice mix: | |
1 tbsp | black mustard seeds, ground into powder |
1 tbsp | black onion seeds, ground into powder |
1 tsp | ground cumin |
1 tsp | ground coriander |
1 tsp | chili powder |
1 tsp | garam masala |
Instructions
Heat oil in a large non-stick pan, add onions, garlic, ginger and red chilies and cook over low heat, stirring frequently, for about 5 minutes until softened. Add spice mix and cook for 1 minute, stirring. Add lamb pieces and salt and cook, stirring, until sealed. Add vinegar and water and bring to the boil. Reduce heat and simmer, stirring occasionally, for about 30 minutes until most of the water has evaporated and the sauce has thickened.Serve with boiled rice and garnish with green chilies.
