Ingredients

4 tbsp oil
2 medium onions, finely chopped
4 clove(s) garlic, crushed
1 piece(s) fresh root ginger, 2,5cm, finely chopped or grated
2 large fresh red chilies, seeded and quartered lengthwise
750 g lamb fillet, cut into bite-size pieces
1 tsp salt
75 ml malt vinegar
150 ml water
2  fresh green cilies, seeded and cut into rings, for garnish
For the spice mix:
1 tbsp black mustard seeds, ground into powder
1 tbsp black onion seeds, ground into powder
1 tsp ground cumin
1 tsp ground coriander
1 tsp chili powder
1 tsp garam masala

Instructions

Heat oil in a large non-stick pan, add onions, garlic, ginger and red chilies and cook over low heat, stirring frequently, for about 5 minutes until softened. Add spice mix and cook for 1 minute, stirring. Add lamb pieces and salt and cook, stirring, until sealed. Add vinegar and water and bring to the boil. Reduce heat and simmer, stirring occasionally, for about 30 minutes until most of the water has evaporated and the sauce has thickened.

Serve with boiled rice and garnish with green chilies.
