Ingredients

400 g	pasta
some	salt and freshly ground black pepper, to taste
3	bell peppers, red, green and yellow, diced
1	onion, chopped
2 tbsp	olive oil
¼ l	tomato juice
	sugar
125 g	mozzarella, diced
2 sprig(s)	basil, chopped

Instructions

Cook the pasta in salted water until tender, but still a bit firm to the bite.

In the meantime heat the oil in a large saucepan. Fry the onions until golden. Add the bell peppers and simmer for 5 more minutes. Pour in the tomato juice. Season to taste with salt, pepper and sugar. Cook until the bell pepper is tender.

Toss in the cooked pasta and the mozzarella and let steep for a minute. Sprinkle with basil and serve.
