Pasta with bell pepper and tuna sauce recipe details
Ingredients
500 g | pasta, e.g. spaghetti |
1 large | red bell pepper |
1 | onion |
1 clove(s) | garlic |
1 tbsp | olive oil |
1 large can(s) | tuna, drained, 185g |
2 tbsp | lemon juice |
60 ml | vegetable stock, hot |
4 tbsp | crème fraîche |
salt and pepper | |
½ bunch(es) | parsley |
100 g | Feta cheese |
Instructions
Dice the bell pepper, the onion and the garlic. In a skillet heat the oil and sauté the vegetables for approximately 4 minutes or until tender.Cook the pasta in boiling salted water until al dente.
Drain the tuna and combine in a bowl with the lemon juice and vegetable stock. Purée with a hand blender. Stir in the Crème fraîche and season to taste with salt and pepper.
Wash, pat dry and chop the parsley.
Combine the tuna sauce with the bell peppers and bring to a short boil.
Serve the pasta with the sauce, sprinkled with parsley and Feta cheese.
