Ingredients

500 g	pasta, e.g. spaghetti
1 large	red bell pepper
1	onion
1 clove(s)	garlic
1 tbsp	olive oil
1 large can(s)	tuna, drained, 185g
2 tbsp	lemon juice
60 ml	vegetable stock, hot
4 tbsp	crème fraîche
	salt and pepper
½ bunch(es)	parsley
100 g	Feta cheese

Instructions

Dice the bell pepper, the onion and the garlic. In a skillet heat the oil and sauté the vegetables for approximately 4 minutes or until tender.

Cook the pasta in boiling salted water until al dente.

Drain the tuna and combine in a bowl with the lemon juice and vegetable stock. Purée with a hand blender. Stir in the Crème fraîche and season to taste with salt and pepper.

Wash, pat dry and chop the parsley.

Combine the tuna sauce with the bell peppers and bring to a short boil.

Serve the pasta with the sauce, sprinkled with parsley and Feta cheese.
