Ingredients

500 g pasta
1 large aubergine, diced
salt and freshly ground black pepper
1 can(s) peeled tomatoes
1 tsp ground coriander
2  dried red chili peppers, seeded and chopped
125 g black olives, pitted and sliced
1 bunch(es) parsley, chopped
extra virgin olive oil
1 tbsp red wine vinegar
150 g freshly grated Parmesan cheese

Instructions

In a pan, heat 8 tablespoons of oil. Add the aubergines, coriander and the chili. Fry the aubergines until golden brown all around. Add the tomatoes and cook until the sauce has thickened. Stir in the olives. Season to taste with salt, pepper and vinegar.

Cook the pasta in salted water until al dente. Drain.

Mix together the cooked pasta and the sauce and toss. Serve immediately, sprinkled with basil and Parmesan cheese.
