Pasta salad with bell pepper and tuna recipe details
Ingredients
300 g | pasta |
salt and pepper | |
1 | yellow bell pepper, diced |
1 | green bell pepper, diced |
1 | red onion, sliced |
5 tbsp | oil |
250 g | cherry tomatoes, halved |
50 g | rocket |
2 tbsp | balsamic vinegar |
100 ml | vegetable stock |
1 tsp | honey |
100 g | black olives, pitted and sliced |
1 can(s) | tuna, drained |
Instructions
Cook the pasta in salted water until al dente.In a pan, heat 1 tablespoon of oil. Add the bell peppers and the onion. Sauté until translucent.
In a bowl whisk the vinegar with stock, honey and the remaining oil. Season to taste with salt and pepper.
In a salad bowl, combine the cooked and drained pasta with the bell pepper mixture, tomatoes, tuna, olives and rocket. Add the dressing and toss. Check seasoning and adjust if necessary.
