Pasta salad recipe details
Ingredients
6 l | water |
6 tsp | salt |
600 g | pasta (Fusilli) |
1 large | cucumber, diced |
1 bunch(es) | spring onions |
250 g | Feta cheese |
3 bulb(s) | fennel |
1 large can(s) | corn, drained, approx. 280g |
For the Dressing: | |
250 g | yoghurt |
250 g | mayonnaise |
150 ml | single cream |
7 tbsp | lemon juice |
some | sugar |
salt and pepper | |
1 bunch(es) | dill |
Instructions
Cook the pasta al dente. Drain.Dice the cucumber and the Feta. Cut the spring onions in rings. Finely slice the fennel. Drain the corn.
For the dressing whisk together the mayonnaise, single cream, yoghurt, sugar and lemon juice. Season with salt and pepper and stir in the dill.
Add the pasta, cucumber, Feta, spring onions, fennel and corn and mix well. Let steep for 30 minutes and check the seasoning before you serve the salad.
