Ingredients
250 g | pasta |
120 g | sundried tomatoes in oil, sliced |
150 g | roasted bell peppers, diced |
75 g | artichokes in oil, drained and sliced |
2 clove(s) | garlic, mashed |
salt and freshly ground black pepper | |
2 tsp | capers |
20 | olives, sliced |
1 tbsp | basil, chopped |
1 tbsp | oregano, chopped |
1 tbsp | parsley, chopped |
1 tbsp | white wine vinegar |
2 tbsp | balsamic vinegar |
½ tbsp | mint, chopped |
2 tsp | green pesto |
chili powder | |
lemon juice | |
1 pinch(es) | sugar |
Instructions
Cook the pasta in salted water until al dente. Drain.
Mix together the vinegar, pesto, mint, parsley, basil, oregano, sugar and garlic. Season with salt, pepper, chili powder and lemon juice. Stir in the vegetables, capers, olives and the cooked pasta. Mix well, cover and allow to marinate for 2 hours in the refrigerator.
To serve, check seasoning and correct if necessary.
