Pasta primavera rapida recipe details
Ingredients
80 g | penne, or spirals |
200 g | vegetables, fresh, aim for a selection of four: French beans, broad beans, courgettes, fennel, asparagus tips, |
½ | pot of créme fraîche (half fat) |
1 | squeeze lemon juice |
25 g | freshly grated parmesan |
6 | basil leaves, torn |
salt and pepper, to taste | |
¼ | chicken stock cube, in a little water |
Instructions
Boil the vegetables and pasta for the appropriate cooking time for them to be al dente.Place the crème fraîche in a micro wave dish with the chicken stock, salt, pepper, lemon juice, basil and parmesan. Microwave for 2-4 minutes on medium. Mix the cream and cheese sauce and drained vegetables together and pour over the pasta, mix and serve with an Italian white wine, and extra parmesan to sprinkle.
