Pasta in tomato sauce with chorizo recipe details
Ingredients
250 g | carrots, sliced |
1 stalk(s) | leek, sliced |
salt and pepper | |
1 clove(s) | garlic, chopped |
2 tbsp | oil |
200 g | chorizo, sliced |
400 g | pasta of your choice |
2 tbsp | tomato puree |
1 can(s) | tomatoes, peeled and chopped |
sugar | |
2 sprig(s) | basil, chopped |
4 tbsp | freshly grated Parmesan cheese, grated |
Instructions
In a saucepan heat the oil. Add the sausages and fry until golden and crispy. Remove the sausages from the pan and set aside. Fry carrots, leek and garlic for 3-4 minutes. Add the tomato purée and cook stirring for a minute. Deglaze with the tomatoes and cook over low heat for another minute. Season to taste with salt, pepper and sugar. Return the sausages and cook for 8-10 minutes.In the meantime cook the pasta in salted water until al dente. Drain and add to the sauce.
Adjust the seasoning and fold in the basil. Serve sprinkled with Parmesan cheese.
