Pasta bake with sausage and bell peppers recipe details
Ingredients

4 clove(s) | garlic |
200 g | carrots |
200 g | celeriac |
400 g | mushrooms |
6 | bell peppers, 2 red, 2 yellow and 2 green |
500 g | spicy smoked sausage |
6 tbsp | rapeseed oil |
2 tbsp | mild paprika powder |
2 large can(s) | tomatoes, peeled, approx. 400g each |
850 ml | beef stock |
salt and pepper | |
1 kg | pasta (Tortiglioni) |
450 g | Cheddar cheese, grated |
1 bunch(es) | parsley, chopped |
Instructions
Preheat the oven to 200°C.Finely dice the onions and the garlic cloves. Peel and dice the carrots and the celeriac. Cut the mushrooms in slices. Seed and dice the bell peppers. Halve the sausage lengthwise then slice.
Heat the rapeseed oil in a large saucepan. Sauté the onions and the garlic until lucent. Add the carrots, celeriac and mushrooms. Dust with paprika. Add the tomatoes with their liquid. Lightly mash the tomatoes. Add the beef broth, bring to the boil and season to taste with salt and pepper. Add the pasta and bring to the boil again. Stir well, then transfer the lot in a lightly greased large casserole dish. Bake for 15 minutes.
Remove from the oven and mix in the sausage and bell peppers. Sprinkle with Cheddar. Reduce the heat from the oven to 160°C and bake for further 20 minutes.
Finely chop the parsley and sprinkle on top of the casserole. Ready to serve.
