Papaya coffee cake recipe details
- Ingredients:
- 1-1/2 cups flour
- 1/3 cup cornmeal
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground nutmeg
- 1/4 cup margarine
- 3/4 cup sugar
- 2 eggs
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 papaya, peeled and diced
Stir flour, cornmeal, baking powder, baking soda, and nutmeg in large bowl. In a smaller bowl, beat margarine, sugar, and eggs. Blend in buttermilk and vanilla. Add the diced papaya. Add to flour mixture. Pour batter into greased and floured springform pan and spread evenly. Arrange 2 or 3 sliced papaya over batter and sprinkle 2 teaspoons sugar and 1/2 teaspoon cinnamon over papaya.
Bake at 425 degrees for 40 to 45 minutes.
