Pancakes details
INGREDIENTS:Makes 7
110g all-purpose flour
1/4 tsp baking powder
1/4 tsp baking soda
2 tbsp sugar
1/2 tsp lemon juice
130-140ml milk
1 egg
30g melted butter
extra butter for frying
METHOD:
- Sift flour, baking powder and baking soda into a mixing bowl. Add sugar and blend the dry ingredients slightly.
- Add lemon juice into milk and stand for 5 minutes.
- Add (2), egg and melted butter to dry ingredients of (1). Mix to form a smooth batter. Add some milk if batter is too thick. Stand batter for 15 minutes.
- Preheat a non-stick frying pan. Brush base with melted butter. Use a ladle to scoop batter to pan. Cook over medium heat until underside is golden. Turn pancake over and cook the other side.
- Remove from pan; repeat with remaining batter.
- Serve warm with butter, fruit jam, cream, ice-cream or maple syrup.
