Ingredients
240 g | selfraising flour |
1 tbsp | dried milk |
¼ tsp | bicarbonate of soda |
½ tbsp | sugar, generous |
1 pinch(es) | salt |
250 ml | water |
1 medium | egg |
1 tbsp | sunflower oil |
½ tsp | cream of tartar |
1 tbsp | golden syrup |
Instructions
This recipe is from my Scottish mother in law.Sieve the flour into a bowl and add the dried milk, bicarb of soda, sugar and salt.
In a separate jug mix together the water, egg and oil, beat with a fork and put this wet mixture into the bowl with the dry mixture. Spoon in syrup and sieve the cream of tartar on top then beat the whole mixture with a wooden spoon vigorously. It should be the consistency of very thick double cream. It is very important to beat the mixture well and never re beat it again or add more water afterwards as the pancake may turn out rubbery!
Leave to stand at the side while you heat up a griddle pan or a pancake pan. Best use a smooth non stick type and then you do not need to grease it at all. When the pan is quite hot add a serving spoon full of mixture, let it cook for about 20-25 seconds – you know when it is ready when the mixture bubbles up around the edges and in the middle. Turn over and wait another 10 to 20 seconds. You can usually do two or so at a time. If the mixture is too thick and or the cooking time is too short, you may be left with a pancake with an uncooked centre.
Place the finished pancakes on a metal cooling rack covered with a clean tea towel, and then keep them covered with the same or another tea towel as you make them.
