Oxfordshire carrot pudding recipe details
Ingredients
12 medium carrots, peeled and sliced |
2 eggs |
some milk |
4 tbsp butter |
2 tbsp flour |
butter for the pudding mould |
breadcrumbs for the pudding mould |
salt and pepper |
Instructions
In a saucepan cover the carrots with water and bring to a boil. Reduce the heat and cook the carrots until soft. Drain the carrots and purée. Season with salt and pepper.In a pan melt half of the the butter. Add the flour and cook over low heat until pale yellow. Pour in a little milk and stir with a wire whisk until thick, smooth and well combined. Allow to cool a bit, then mix with the egg yolks and the carrot purée. Whisk the egg whites with a pinch of salt until stiff, then fold the beaten egg white in the carrot mixture.
Butter a pudding mould and coat with breadcrumbs. Pour the carrot mixture into the mould. Steam the pudding in a hot water bath for 45 minutes.
In a small pan heat the remaining butter until slightly browned. Turn over the pudding onto a serving plate and serve with the brown butter.
