Oven baked tomato and mozzarella recipe details
Ingredients
3 slice(s) | toast |
60 g | soft butter |
½ bunch(es) | basil, chopped |
4 sprig(s) | thyme, chopped |
½ bunch(es) | parsley, chopped |
1 tsp | lemon zest |
3 | tomatoes, sliced |
250 g | mozzarella cheese, sliced |
salt and black pepper |
Instructions
Preheat the oven to 180°C. Spread the toast slices with half of the butter. Bake until crispy. Allow the toasts to cool, then crumble.Preheat the oven to 200°C.
Mix together the crumbled toast, basil, thyme, parsley and lemon zest. Arrange the mozzarella cheese slices and tomato slices in alternating layers in a buttered casserole. Sprinkle with salt, pepper, the crumbled toast mixture and the remaining butter. Bake for 10 minutes or until the cheese has melted.
Serve with baguette or garlic bread.
