Ingredients

1 ½ kg	sweet potatoes, peeled, diced
120 ml	honey
3 tbsp	fresh ginger
2 tbsp	olive oil

Instructions

Preheat oven to200°C.

In a large bowl, combine potatoes, honey, ginger and oil. Mix and then transfer to a large baking dish.

Bake for 20 minutes, remove from oven and stir.

Place back in the oven and bake for another 20 minutes.
