Oven baked lamb shoulder and summer vegetables recipe details
Ingredients
400 g | boned shoulder of lamb, cut into 3cm cubes |
3 | tomatoes, peeled and roughly chopped |
1 | red bell pepper, cleaned and chopped |
2 | onions, sliced |
600 g | potatoes, peeled and cut into 3cm cubes |
2 clove(s) | garlic, sliced |
dried Italian herbs | |
3 tbsp | oil |
salt and freshly ground black pepper | |
cayenne pepper |
Instructions
Preheat the oven to 200°C, fan on.Place the meat and all vegetables into the dripping pan of your oven, season with herbs, garlic, salt, pepper and cayenne pepper and add the oil. Toss with your hands until all is well mixed.
Bake in the oven for 40 minutes.
