Oven-Baked Apple Pecan Pancake recipe

- 2 eggs
- 1/2 cup milk
- 3/4 cup pancake mix
- 1/3 cup sugar
- 1 teaspoon cinnamon
- 1/4 cup butter
- 2 large tart apples, thinly sliced
- 1/4 cup pecans (optional)
Preheat oven to 450 degrees Fahrenheit. Melt butter in oven-proof skillet and sautÃ© apple slices over medium-high heat. Beat eggs with fork, then add milk, pancake mix, and 1 teaspoon sugar. Add pecans to apples and remove from heat. Using individual ramekins, spoon apples into bottom of 3 to 4 ramekins and pour batter evenly over apple mixture. Combine remaining sugar and cinnamon, sprinkle evenly over batter, and bake pancakes for 10 to 12 minutes until puffed. Drizzle while hot with a butter pecan ice cream sauce or serve with maple syrup with just a hint of orange squeezed into syrup.
