Oven asparagus puff recipe details
- Ingredients
- 1 pound asparagus
- 4 Tablespoons butter
- 2 Tablespoons onion, chopped
- 1/2 teaspoon sugar
- salt
- 6 eggs
- 1/3 cup half & half
- pepper
- 1-1/2 cups grated cheddar cheese
Cut asparagus in 1-inch pieces (2 cups). Saute onion in 2 tablespoons butter. Add asparagus; sprinkle with sugar and 1/2 teaspoon salt. Cover and steam 1 to 2 minutes. Remove cover and evaporate most of the liquid. Cool slightly.
Beat eggs, cream, 1/2 teaspoon salt and 1/8 teaspoon pepper. Melt remaining butter in baking dish. Pour in egg mixture and cook until bottom sets, about 3 minutes. (I often do this step in the microwave.)
Arrange asparagus and onion on top of eggs. Bake at 425 degrees for 5 minutes. Remove from oven and sprinkle with cheese. Return to oven for 10 minutes or until set and browned slightly.
