- Ingredients:
- 1/4 cup light raisins
- 3 oranges
- 3 cups ricotta or cottage cheese
- 4 egg yolks
- 1/2 cup ground almonds
- 1/3 cup sugar
- 1/4 cup minced candied orange peel
- 1 teaspoon almond extract
Pour boiling water to cover light raisins. Slice oranges in half crosswise, remove segments of fruit, and place them in a colander to drain. Scrape out all the white pith from the skins and, with a sharp knife or pinking shears, make a sawtooth edge around the top.
Sieve ricotta or cottage cheese twice, or pass through a food mill. To the cheese, add egg yolks, ground almonds, sugar, minced candied orange peel, and almond extract. Drain the raisins thoroughly, add to the cheese, and stir the mixture gently. Spoon into the orange shells, and chill 2 hours or longer. Shortly before serving, garnish with the drained orange segments.
