- Ingredients
- 2 eggs, beaten
- 1/4 cup safflower or other low-cholesterol oil
- 1 Tablespoon vanilla extract
- 1 teaspoon almond extract
- 2 1/4 cups orange juice, with a banana blended (banana optional)
- 2 cups whole wheat flour
- 1/2 cup wheat germ
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup blueberries, apple or pear chunks, or granola (optional)
Instructions:
In a medium bowl combine the eggs, oil, vanilla, and almond extract. Add 2 cups of orange juice.
In a separate bowl sift together the salt, flour, and baking soda. Mix in the wheat germ. Slowly blend the dry ingredients into the liquid, adding the remaining orange juice until the mixture is the desired consistency: Thicker for fatter pancakes, thinner for more crepe-like ones.
