Orange salad with saffron recipe details
Ingredients
150 g | sugar |
2 | vanilla pods, black seeds scraped out |
4 | oranges, grated peel and fillets |
1 stalk(s) | lemon grass, cut small |
2 | kaffir lime leaves |
1 tsp | fresh ginger, grated, finely chopped |
500 ml | orange juice, freshly pressed |
3 tbsp | corn starch |
1 g | saffron |
Grand Marnier, liqueur | |
4 scoop(s) | vanilla ice cream, to serve |
Instructions
In a saucepan, caramelise the sugar with 3 tablespoons of water over medium heat until golden brown. Add the vanilla seeds, the orange peel, lemon grass, kaffir lime leaves and ginger. Deglaze with the orange juice and stir well.Simmer the mixture over low heat, then strain through a sieve back into the saucepan and bring to the boil again. Mix the corn starch with a little cold water until smooth, stir this into the saucepan and cook until thickened. Stir in the saffron and refine to taste with Grand Marnier.
Take from heat, add the orange fillets and marinate at room temperature for 2 hours.
Gently reheat the orange salad until lukewarm and serve with vanilla ice cream.
