Orange pound cake recipe details
Ingredients
225 g | butter, at room temperature |
330 g | caster sugar |
4 large | eggs |
175 g | plain flour |
1 ½ tsp | baking powder |
2 tbsp | fresh orange zest, from unwaxed fruit only |
2 tbsp | fresh orange juice |
50 g | dates, chopped |
50 g | pecans, chopped |
Instructions
Grease and flour a 2lb, 900g-1Kg loaf tin.Preheat oven to Gas Mark 4, 350°F, 180°C.
In a large bowl beat the butter until soft. Add sugar and beat until light and fluffy. Add eggs one at a time and beat after each one.
Sift flour and baking powder into separate bowl. Mix with egg mixture until blended.
Stir in orange juice and zest and fold in nuts and dates.
Bake for 45-55 minutes or until a skewer inserted into centre of cake comes out clean.
Remove from oven and cool in tin for 10 minutes. Turn out to cool completely on wire rack.
Slice to serve.
