Ingredients

  1. Refines flour – 1cup
  2. Eggs – 4
  3. Caster Sugar – 2/3 cup
  4. Butter – 60 grams (unsalted)

For Filling

  1. Corn Flour – 2 tbl sp
  2. Lemon Juice – 1/3 cup
  3. Tangerine Juice (keeno ka rus) – 1/3 cup
  4. Tangerine Rind (keeno k chilke) – 1 tsp
  5. Caster Sugar – 1/3 cup
  6. Egg Yolks – 2
  7. Butter – 1tbl sp
  8. White Chocolate – for garnishing

For Toping

  1. White Chocolate – 200 grams
  2. Cream – ½ cup
  3. Butter – 60 grams (unsalted)

Instructions

  1. Pre-heat oven at 200 C
  2. Line an 8 inch wide baking mould with butter paper
  3. Beat eggs and sugar well and fold(hath se hilain) in refined flour
  4. Add butter and mix well
  5. Put mixture in the mould and bake for 20mins
  6. Put 3tbl sp water and sugar, lemon juice, tangerine juice and tangerine rinds in a pot
  7. Cook for a while
  8. When sugar dissolves, add corn flour mixed in little water and cook more, then remove from flame
  9. Add egg yolks and butter in this and mix well
  10. Take it out in a bowl and leave to cool
  11. When cake is ready, take it out off the oven and let it cool
  12. Cut cake from the center into two parts, spread egg yolk mixture on the lower layer
  13. Place the other part on top
  14. Put topping ingredients in a sauce pan and cook for a while
  15. Let it cool
  16. Make a layer of the topping on the cake, garnish with white chocolate scrapping and serve
