Onion tart and new wine recipe details
Ingredients
500 g | flour |
1 pinch(es) | salt |
1 pinch(es) | sugar |
7 g | dry yeast |
lukewarm water | |
2 kg | white onions |
400 g | smoked bacon, cut in squares |
200 g | crème fraîche |
200 g | Emmentaler or Edamer or young Gouda |
4 | eggs |

caraway (whole seeds) |
Instructions
Put flour in a bowl, add two teaspoons of salt. Make a little well in the middle, add a pinch of sugar, dry yeast and two tablespoons of lukewarm water. Let sit until bubbles appear. Add as much water as necessary to create a nice and elastic, but not sticky, dough. Cover with kitchen towel and place at a warm place (<36°C).Peel and cut onions in small pieces. Put a pan on the stove, heat it and put smoked bacon blocks inside. Turn down the heat, add onions, simmer slowly until cooked, but do not let them get brown or black. Let cool down a bit.
Mix onions, bacon, Creme fraiche and eggs in a large bowl. Add grated cheese, salt, pepper and caraway seeds.
Preheat the oven to 220°C.
Roll out the dough thinly and place on an oven tray, top with onion topping. Bake until dough is done and the top layer get brown.
