One Dish Lamb Chops with Balsamic Vinegar Reduction

All you balsamic lovers, this one’s for you. Lamb chops seasoned simply with herbs you probably already have in your spice drawer, cooked, and the drippings used as the base for a simple gravy. Great date night dinner.

Ingredients
Serves: 4- 4 lamb chops
- 1/2 teaspoon dried rosemary
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper
- 1 1/2 tablespoons olive oil
- 1/4 cup minced shallots
- 1/4 cup balsamic vinegar
- 3/4 cup chicken stock
- 1 tablespoon butter
Preparation method
Prep: 5 mins | Cook: 15 mins | Extra time: 15 mins, resting1. Season lamb chops with rosemary, basil, thyme, salt, and pepper. Let stand for 15 minutes.
2. Pour olive oil into a large skillet and set over medium-high heat. Add lamb chops and cook in hot oil for about 7 minutes, flipping midway through cooking time, until lamb reaches an internal temperature of at least 145 degrees F (for medium-rare). Transfer to a plate and cover with foil.
3. Stir shallots into the drippings from the lamb chops and cook for about 2 minutes. Then add vinegar and stock. Bring to a boil and cook until the sauce has thickened and reduced to half its original volume.
4. Add butter to the sauce, turn off heat, and stir to melt. Serve lamb chops with the sauce poured over each.
