Omelettes with Sherry Sauce recipe

- Ingredients:
- 1 cup mushrooms (sliced and sauteed)
- Sauce:
- 3 Tablespoons butter
- 3 Tablespoons flour
- 1-1/2 cups milk
- 1 cup very sharp cheddar cheese, shredded
- 3 Tablespoons sherry
In a saucepan melt butter and stir in flour to make a roux. Blend in small amount of milk; gradually stir in rest of milk; when mixture begins to thicken add cheese, sherry, and mushrooms. Make omelette; spoon in mixture. Top with garnish of choice.
