Omelette with tomato feta cheese and herbs recipe details
Ingredients
3 sprig(s) | dill, chopped |
½ bunch(es) | chives, chopped |
3 sprig(s) | parsley, chopped |
2 | eggs |
2 tbsp | milk |
3 | spring onions, chopped |
1 | tomato, diced |
50 g | Feta cheese, diced |
salt and pepper | |
2 tsp | oil |
40 ml | vegetable stock |
Instructions
In a bowl whisk the eggs with the milk and stir in the herbs. Season with salt and pepper.In a pan heat half of the oil. Sauté the spring onions and the tomatoes. Pour in the stock and cook over low heat for 5 minutes. Season to taste with salt and pepper.
In a pan heat the remaining oil. Pour in the eggs and fry the omelette from both sides until golden. Top half of the omelette with the tomato and cheese mixture. Sprinkle with the Feta cheese. Fold over the other half and serve the omelette.
