Olive sauce with gherkins and shallots recipe details
Ingredients
1 cup(s) | olives, stones removed |
2 tbsp | butter |
4 tbsp | flour |
some | vegetable stock |
some | lemon juice |
1 pinch(es) | mace |
½ handful | gherkins, chopped |
2 | shallots, sliced |
½ tbsp | peppercorns |
1 | clove |
1 tbsp | tomato puree |
Instructions
In a pan, melt the butter. Stir in the flour and the tomato purée and cook stirring for a minute. Pour in some stock and bring to a boil. Add mote stock, if too thick. Cook for approximately 5 minutes.Add the gherkins, lemon juice, shallots, mace, peppercorns and the clove and cook for 5 more minutes. Pass the sauce through a sieve. Reheat again and add the olives.
Remove from the heat and serve.
