Olive oil poached veal tenderloin recipe details
Ingredients
720 g | veal tenderloin |
sea salt and pepper | |
500 ml | olive oil |
1 bunch(es) | parsley, chopped |
Dijon mustard |
Instructions
Trim the veal tenderloin and tie with kitchen twine. Season with sea salt and pepper.In a skillet, heat 2 tablespoons of oil. Fry the meat over medium heat until golden all around.
In a saucepan, heat 500 ml of olive oil to 80°C. Add the meat and poach for 20 minutes. Take out of the oil and set aside for 5 minutes.
Remove the kitchen string. Spread the meat with mustard and roll through the chopped parsley. Cut into slices and serve.
