Ingredients
16 slice(s) | baguettes |
4 tbsp | olive oil |
4 | tomatoes, chopped |
150 g | black olives, pitted, chopped |
4 tbsp | fresh cilantro, chopped |
1 tbsp | Parmesan cheese, grated |
salt and pepper, to taste |
Instructions
Preheat oven to 200°C.
Dip baguette slices in a bit of oil and toast in oven for about 5 minutes.
In a bowl, combine the tomatoes, olives, some olive oil and cilantro. Season with salt and pepper and stir well.
Divide and spread the mixture evenly on top of each piece of toast and sprinkle with grated cheese.
Return to the oven for and bake for another 5 minutes. Serve warm.
