Oat rolled mackerel recipe details
Ingredients
4 | mackerel fillets, scales removed |
2 medium | eggs, beaten |
50 g | butter |
150 g | porridge oats |
1 large | lemon, juice only |
salt and fresh ground pepper to taste |
Instructions
Place the oats in a flat dish or baking tray. Thoroughly coat both sides of the fillets with egg, season well and cover with the oats. Set aside.Melt the butter in a large pan until it foams. Add the fillets and cook over a medium heat for about 3 minutes per side. Use a fish slice, and a fork if necessary, to assist in turning without splashing the hot butter oil.
Serve with a green salad and a vinaigrette dressing.
