Nottingham pudding recipe details
Ingredients
120 g | flour |
1 pinch(es) | salt |
450 g | cooking apples, peeled, cored and sliced |
grated rind of half a lemon | |
2 tsp | lemon juice |
1 large | egg |
140 ml | milk |
140 ml | water |
3 tbsp | butter, level tbsp. |
½ tsp | cinnamon |
90 g | brown sugar |
2 tbsp | lard, for baking |
Instructions
Sieve the flour into a bowl and add the salt, make a well in the centre and add in the egg. Gradually add half of the water and milk. Mix until creamy. Add the remaining milk and water and stir until the batter is smooth and well combined. Allow to rest in a cool place for approximately 20 minutes.Preheat the oven to 210°C.
M elt the butter in a heavy frying pan, the apples, the lemon juice and rind, cinnamon and sugar. Cook until the apples are soft.
Grease a 20cm rectangular roasting tin with lard, place the tin onto the upper rack in the oven and wait until the lard starts to smoke. Very carefully put the apple mixture into the hot lard. Pour the batter on top.
Bake for 20 minutes then reduce the oven temperature to 190°C and bake for further 20 minutes until the batter is firm and golden.
Serve with cream or custard.
