- Ingredients Base:
- 1/4 cup butter, melted
- 3-1/2 cups bread crumbs
- 3 eggs, beaten
- 1 cup milk
- 1 Tablespoon sugar
- Bread Crumb Mix:
- 1/3 cup butter, melted
- 3 cups bread crumbs
- Filling:
- 1 pound frozen peaches, thawed and chopped
- 1/4 cup raisins
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cloves
- 1-1/2 teaspoons cinnamon
- 1 cup sugar
- 1 teaspoon salt
- 1-1/2 teaspoons vanilla
- 4 Tablespoons lemon juice
- 2 teaspoons lemon rind, grated
- Optional Topping:
- 1/2 cup sour cream
- 1-1/2 teaspoons lemon juice
- 1/2 teaspoon lemon rind, grated
- 2 Tablespoons sugar
A rich and savory hot bread pudding.
Prepare optional topping night before and refrigerate, covered, overnight. Mix base ingredients and spread in large casserole dish. Cook, covered, in microwave until soft/firm in middle. Mix filling and spread 1/2 over base. Spread 1/2 of bread crumb mix over filling. Repeat layers with remainder.
Cook casserole for 40 minutes, covered, at 350 degrees. Remove cover and cook at 40 degrees for 10 to 15 minutes to brown crust. Serve piping hot with or without topping.
Serves: 8 hungry people.
