Norfolk lamb parcel recipe details
Ingredients
1 | lamb breast, bones removed, cut into 4 equal sized pieces |
3 tbsp | oil |
3 tbsp | lard |
3 | onions, chopped |
1 tbsp | sage, chopped |
1 tbsp | cranberry chutney |
salt and pepper | |
2 tbsp | butter |
125 g | breadcrumbs |
200 g | sausage meat |
200 ml | chicken stock |
Instructions
Preheat the oven to 190°C.In a pan heat the lard and sauté the onions until lucent. Pour in the stock and cook for about 10 minutes over low heat. Stir in the breadcrumbs and the sausage meat. Season with the chutney, sage, salt and pepper.
Divide the mixture on two pieces of lamb breast. Cover with the other lamb pieces to make 2 sandwiches. Tighten thoroughly with kitchen yarn.
Arrange the parcels on a lined baking tray. Spread the parcels with oil and butter. Season with salt and pepper. Bake for 25-30 minutes, then reduce the heat to 150°C and bake for another 90-120 minutes.
