Ingredients
4 | nectarines, peeled, pitted, cut into bite sized pieces |
50 g | sugar |
½ tsp | ginger, ground |
1 tsp | lemon juice |
90 g | cream cheese |
1 head(s) | lettuce |
300 g | fresh raspberries |
100 g | grapes, seedless |
Instructions
Combine nectarines, sugar, ginger and lemon juice; toss gently. Cover and refrigerate for one hour. Then drain nectarines, reserving liquid.For the dressing combine cream cheese and reserved liquid. Mix well.
To serve, shred lettuce and place on a serving plate for each portion. Arrange nectarines, raspberries and grapes on shredded lettuce. Pour cream cheese dressing over fruit.
