Ingredients

700 g nectarines, sliced
200 g sugar
2 medium eggs, yolks only, beaten
For the topping:
100 g flour
1 ¼ tsp baking powder
6 tbsp sugar
¼ tsp salt
6 tbsp butter
120 ml milk
2 medium eggs, whites only, beaten

Instructions

Preheat oven to 180°C.

Toss fruit with sugar and stir in egg yolks. Place into a buttered pan and sprinkle with cinnamon.

In a bowl, combine flour, baking powder, sugar and salt and toss lightly to mix. Add butter and mix with an electric mixer until crumbly. Add milk, keep stirring until smooth. Then fold in egg whites.

Spoon mixture over fruit and bake for 25 to 30 minutes.
