- Ingredients for cake:
- 2 cups flour
- 2 cups sugar
- 3 cups (1 pound) shredded carrots
- 1 cup oil
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon (add a little more)
- 4 eggs
- Cream Cheese Frosting: Ingredients:
- 8 ounces Philadelphia Cream Cheese
- 1/4 cup margarine
- 1 teaspoon vanilla
- 1 pound confectioner’s sugar
Instructions:

Cake:Mix everything together in a large bowl. Divide batter into two greased and floured 8 or 9 inch pans. Bake at 325 degrees for 50 to 60 minutes.
Frosting:Cream together cream cheese, margarine and vanilla. Blend confectioner’s sugar a little at a time.
