Nancy’s carrot cake recipe, recipe Rating: 4.6

Ingredients for cake:
2 cups flour
2 cups sugar
3 cups (1 pound) shredded carrots
1 cup oil
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon (add a little more)
4 eggs
Cream Cheese Frosting: Ingredients:
8 ounces Philadelphia Cream Cheese
1/4 cup margarine
1 teaspoon vanilla
1 pound confectioner’s sugar

Instructions:

“Not just a wonderful dessert but a real favorite for breakfast.”

Cake:Mix everything together in a large bowl. Divide batter into two greased and floured 8 or 9 inch pans. Bake at 325 degrees for 50 to 60 minutes.

Frosting:Cream together cream cheese, margarine and vanilla. Blend confectioner’s sugar a little at a time.
