- Ingredients
- 1/2 cup butter (1 stick)
- 1/4 cup sugar
- 3 Tablespoons cocoa
- 2 cups graham cracker crumbs
- 1 cup shredded coconut
- 1/2 cup chopped walnuts
- 1/4 cup softened butter
- 3 cups powdered sugar
- 3 Tablespoons instant vanilla pudding powder
- 2 Tablespoons sour cream (optional)
- 2 teaspoons vanilla extract
- 2 Tablespoons milk
- 12 ounces semi-sweet chocolate chips
- 1 cup heavy cream
Nanaimo Bars are local only to Vancouver, British Columbia. After traveling to Vancouver and encountering these tasty delights, we had to make them for the guests of The Eighteenth Street Inn. There are hundreds of local recipe versions for Nanaimo Bars. After talking with many locals, we went to the kitchen and developed this recipe. It is very easy to add a variety of flavorings to this recipe. Our basic recipe is a little lighter than most and the top layer is a chocolate ganache, unlike most recipes that we were given which called for plain melted chocolate. Combine and melt 1/2 cup butter, sugar, and cocoa. Combine in bowl crumbs, coconut, and walnuts. Stir graham cracker mixture into butter mixture; press into pan and chill. In an electric mixer, whip 1/4 cup softened butter and vanilla pudding powder until smooth. Gradually add powdered sugar, sour cream, vanilla, and milk and continue beating until smooth. Spread mixture on top of crust. Chill.
Place chocolate chips in a heat-resistant bowl. Bring cream to a high simmer. Pour hot cream over chocolate and cover. Let stand for 1 minute and stir until smooth. Spread over vanilla pastry cream. Chill until all is firm.
