My grandma's cranberry nut muffins details
Born and raised in the Azores (Portugal), my grandparents were called “Ma” and “Pa.” My mother told me all about growing up on the farm — what a wonderful cook her mother was and how every Sunday the whole family got all dressed up to go to Sunday Mass. — Helen Mary Duarte
- Ingredients:
- 2 cups flour
- 3 teaspoons baking powder
- 1 cup sugar
- 1/2 teaspoon salt
- 3/4 cups orange juice
- 2 teaspoons grated orange rind (fresh)
- 1/3 cup melted butter
- 2 eggs
- 1 teaspoon vanilla
- 1 cup chopped cranberries
- 1/2 cup chopped pecans or walnuts
- 1/4 cup quick Quakeroats
Preheat oven to 400 degrees. Sift dry ingredients in a large bowl. Mix in remaining ingredients and stir well. Spray muffin pan with non-stick cooking spray. Pour batter into muffin tin. Sprinkle cinnamon/sugar on top. Bake for 25 minutes.
Note: Of course, Grandma did not have the luxury of “Quick” oats and “non-stick” cooking spray.
Yields: 12 muffins.
