Mutton ragout recipe details
Ingredients
500 g | mutton shoulder, cut into cubes |
1 | leek, sliced |
250 g | turnip, peeled and sliced |
1 | carrot, sliced |
2 | onions, sliced |
1 | bay leaf |
½ l | lamb stock |
1 sprig(s) | fresh thyme, finely chopped leaves |
salt and pepper | |
2 tbsp | butter |
Instructions
In a saucepan, heat the butter. Add the meat and cook over medium heat until browned all around. Stir in the vegetables and the bay leaf and cook over medium heat for 5 minutes, turning frequently.Add the stock and bring to a boil. Season with salt, pepper and thyme. Reduce the heat and stew for 30 minutes. Check seasoning and correct, if necessary.
Serve with potatoes.
