Just like the Dark Lord Vader when he was burned by Kenobi on Mustafar, this recipe guarantees a hunk of red meat seared and smoked to perfection!
Ready in: 1 hour 15 mins

Ingredients

Serves: 4
  • 4 (1- two 2-inchs) thick New York strip steaks
  • 1 tablespoon bacon grease or olive oil as needed
  • liberal amount your favorite steak seasoning
  • 3 cups hickory grilling chips, or as needed

Preparation method

Prep: 5 mins | Cook: 10 mins | Extra time: 1 hour

1. Slather the steaks in melted bacon grease with a basting brush (olive oil works as a good and is a healthier alternate). Use steak seasoning and rub in willingly according to potency (I use Famous Dave’s and I go to town with it.). Wrap in plastic and refrigerate for one hour.
2. Prepare your charcoal grill for indirect high heat, and soak hickory chips in water at least 30 mins before the grill will be ready.
3. When the grill is ready, drain and then spread soaked hickory chips evenly across the coals, and immediately apply the meat for a direct sear over the direct high heat.
4. Cooking times will vary depending on thickness of the steaks. 1-inch thick steaks will take 6-8 minutes, turning once. 1 1/2-inch thick steaks sear 6-8 min direct high heat, turning once; grill 4-6 min indirect heatAlternate method

Keep the lid on as much as possible to concentrate the smoke, and keep water near by to sprinkle on any flames ups which potentially occur with the wood chips.
